Onion-dill rice

Ingredients

  • 3/4 cup rice
  • 1 onion, chopped
  • 2 tbsp olive oil, divided
  • 1/3 tsp coarse sea salt
  • Black pepper to taste
  • 1 tsp A-1 sauce (optional)
  • 1/4 tbsp hot Thai seasoning (optional)
  • 2 tbsp sliced garlic
  • 1 red pepper, cut into 1cm cubes
  • 4-5 sprigs fresh dill, torn into small pieces

Instructions

  1. Start cooking the rice according to package instructions.
  2. In a pan, heat 1 tablespoon of olive oil. Add the chopped onion, salt, and pepper. Cook until moderately browned.
  3. Optionally, add the A-1 sauce and Thai seasoning.
  4. Add the sliced garlic, cubed red pepper, and the remaining 1 tablespoon of olive oil. Cook until the peppers are tender.
  5. Add the fresh dill pieces and the cooked rice to the pan. Stir to combine. Add a tablespoon of water if the mixture is sticking.
  6. Cook for another 3-5 minutes until heated through and any liquid is absorbed.

Managed to concoct a recipe that I ended up quite liking today. Documented since I am unlikely to randomly repeat it.

I served it with two tiny-tiny steaks cooked in the same large-sized pan, seasoned with salt and pepper, though the rice would have been enough split between two people.
