Fannie Farmer's Cranberry Orange Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cup cranberries, chopped (yes, this is double what the standard recipe calls for)
  • 1/2 cup chopped walnuts or pecans (optional)
  • Grated zest of 1 orange
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • 3/4 cup orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Stir in cranberries, optional nuts, and orange zest.
  3. In a separate bowl, combine melted butter, egg, and orange juice.
  4. Pour the wet ingredients into the dry ingredients and stir until just moistened. Do not overmix.
  5. Spoon the batter into the prepared loaf pan.
  6. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

About This Recipe

This recipe is a classic from the Fannie Farmer cookbook. My only change is to add more cranberries, which really works to my taste.
