Fannie Farmer's Cranberry Orange Bread

Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cup cranberries, chopped (yes, this is double what the standard recipe calls for)
- 1/2 cup chopped walnuts or pecans (optional)
- Grated zest of 1 orange
- 2 tablespoons butter, melted
- 1 egg, beaten
- 3/4 cup orange juice
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Stir in cranberries, optional nuts, and orange zest.
- In a separate bowl, combine melted butter, egg, and orange juice.
- Pour the wet ingredients into the dry ingredients and stir until just moistened. Do not overmix.
- Spoon the batter into the prepared loaf pan.
- Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
About This Recipe
This recipe is a classic from the Fannie Farmer cookbook. My only change is to add more cranberries, which really works to my taste.
